Ingredients

  • 4-5 cups Fresh Cranberries

  • 1-2 cloves Garlic

  • Fresh Rosemary

  • Fresh Oregano

  • Fresh Lemon

  • Salt

Directions

  • To Ferment
  • Roughly chop berries into big pieces and put into a sterilized jar
  • Peel garlic and put into the jar. Add honey to fill have the jar
  • Gently bruise the Rosemary and Oregano and add to the jar
  • Fill the jar with honey to the very top. Tap the jar every so often to release any air bubbles.
  • Seal and let sit on the counter for 2 weeks
  • After Fermentation – Make the Sauce
  • Drain the berries from the honey and keep the honey
  • Once the berries have drained but have a light coating of honey, gently mash them into a paste
  • Add freshly squeezed lemon juice and a pinch or two of salt

Notes

  • The amount of cranberries will depend on the size of the jar
  • Use 1 clove of garlic for a pint jar, 2 for a quart
